If you love a warm bowl of oatmeal then you need to try baked oats. Sweetened with bananas, mixed berries and a little maple syrup this oat bake will warm your hot-breakfast-everloving soul.

I generally follow this recipe but it is so flexible and can easily be changed up with whatever you already have that I usually just wing it. I’ve tried it with fresh fruit instead of frozen; pumpkin pie spice instead of cinnamon; less bananas - more bananas; less oats - more oats; pumpkin puree instead of bananas and even all whole rolled oats instead of blending a cup of them and they have all turned out good. This one is hard to mess up!

My favorite way to eat it is served in a bowl with a drizzle of maple syrup and a good splash of soy milk.

This is a great recipe to meal prep for a week of quick breakfasts. It stores great in the fridge, just reheat a slice in the microwave for about 30 seconds to one minute.

ALTERNATIVE OPTIONS:

  • A drizzle of nut butter or additional fresh fruit are always good toppings also

  • You can replace the 2 cups of plant milk with 1 cup plant milk and 1 cup applesauce for extra natural sweetness

  • This dish freezes great. Cut into squares and place in a container, using parchment between any layers, and freeze. Reheat a frozen slice for 2 1/2 minutes in the microwave and top with a generous splash of soy milk and a drizzle of maple syrup and it tastes freshly baked

  1. Preheat oven to 375° F.
  2. In small dish mix flax meal and water and set aside to thicken for the “flax egg”.
  3. Blend 1 cup of oats in a high powered blender until a flour consistency.
  4. In a large bowl mix the rolled and blended oats, baking powder and cinnamon until combined.
  5. In a separate medium sized bowl mash the bananas and mix with the soy milk, maple syrup and vanilla extract.
  6. To the wet ingredients, add in the flax egg and combine.
  7. Pour the wet ingredients into the dry ingredients bowl and mix until completely combined.
  8. Gently fold in the berries.
  9. Spread mixture evenly into a 9x13 oven safe baking dish and bake for 35-40 minutes, or until the center is firm.

Notes

Serve warm with a drizzle of maple syrup and a splash of soy milk.
